CLASSIC COBB SALAD WITH GRAINY DIJON DRESSING

Packed full of protein and flavour,  this salad hits all the marks
INGREDIENTS
1/3 cup red wine vinegar
​
1 tbsp grainy dijon mustard
​
2/3 cup extra virgin olive oil
​
1 head romaine lettuce, chopped
​
4 hard boiled eggs, peeled and quartered
​
12 oz. cooked chicken breast, diced
​
8 slices bacon, cooked and chopped
​
1 avocado, sliced
​
4 oz. blue cheese, crumbled
​
2 large tomatoes, chopped
​
DIRECTIONS
1.
In salad dressing jar, shake together vinegar, mustard, olive oil and salt & pepper.
​
2.
In large bowl or platter, spread out romaine lettuce, then add rows of egg, chicken, bacon, avocado, and tomatoes.
​
3.
Drizzle with dressing, and top with crumbled blue cheese.
​
