MYKONOS GREEK SALAD

INGREDIENTS



1 large cucumber, sliced

​

1/2 red onion, thinly sliced

​

4 cups cherry tomatoes, halved

​

2 cups yellow pepper, chopped 

​

1 cup pitted kalamata olives, halved

​

6 oz. feta cheese, cut into cubes

​

1/4 cup extra virgin olive oil

​

2 tbsp red wine vinegar

​

juice of 1/2 lemon

​

1 tsp dried oregano

​

salt & pepper to taste

DIRECTIONS


1.

In large salad bowl, toss cucumber, onion, tomatoes, olives and feta cheese.

​

2.

In separate bowl, mix olive oil, vinegar, lemon juice and oregano.

​

3.

Drizzle salad dressing over salad and add salt and pepper to taste.
