TOMATO & BOCCONCINI SALAD


Bring the taste of Napoli to the dinner table with this simple, yet elegant salad.

INGREDIENTS


2 cups Cherry tomatoes

1 cup Cherry bocconcini

1/3 cup Fresh basil

1/4 cup Fresh mint (if desired)

1 cup mixed olives

1 1/2 tbsp Extra virgin olive oil

1 tbsp Balsamic reduction

Juice of 1/2 lemon

Salt & pepper to taste

DIRECTIONS


1.

Cut cherry tomatoes and cherry bocconcini in half and add to bowl. 

2.

Add olives, fresh basil and mint leaves to bowl and toss lightly. 

3.

Add olive oil, lemon juice, balsamic reduction and salt & pepper. 

Serve and enjoy!
